Has anyone ever been to Jake’s Country Meats’ booth at the Elmhurst Farmers Market? They travel up from Michigan and have been kind enough to call me in advance so I can freeze batches of their wonderful meats. They have the best pork chops!
I pulled these out of the freezer and put them in the fridge overnight. Then I marinated them all day and threw them on the bbq until my electronic thermometer read 160 degrees.
Yum!
Barbecued Pork Chops
- 1/3 cup Alessi White Balsamic Vinegar
- 2 T. extra virgin olive oil
- 1 T. dijon mustard
- 2 to 3 T. chopped herbs from garden (I used cilantro and parsley)
- 2 cloves chopped garlic
- 1/3 chopped onion
- 1 tsp. honey
- pinch of red pepper flakes
- Two bone-in pork chops
Combine first eight ingredients to form a marinade. Add pork chops and marinate for several hours. Throw them on the grill, and turn once or twice to ensure great browning. Cook to 160 degrees on thermometer.

Their smoked pork chops are delicious. Good bacon too. I miss them when it's not farmer's market season!

Thanks Sarah! I haven't tried their bacon. If you call them they can arrange a time year round to come up and deliver to Elmhurst (I think ).
